Autumns coming!!

Hey guys,

Autumn is coming up and I am excited for all the ingredients which will come more available.

Also three competitions coming up including Macdonald Hotel Chef of the Year, Game Chef of the Year and Gluten-Free Chef of the Year; of course I am entering all three!!

Delicious Beetroot is coming in soon, a beautiful pairing with beef and Cornish mackerel which is still pretty cheap and sustainable.

Hmmm what is life like being  a chef, many people ask me this. Especially this one bloke tonight. Im currentlty working in Tenerife at an amazing 4 star hotel up in Puerto de la Cruz. Tonight during dinner service one engish guy (who was trying to speak spanish, lol) was asking me this question; What is it like being a chef? I answered with a matter of dignity saying it is what it is, but what does this mean? I often have rubbish shifts evern if only 8 or 10 hurs long, either starting at 5am or finishing at 11pm!! Its always hot and sweaty and theres always people shouting! What do i enjoy about it?
I enjoy EVERYTHING! Its awesome being a chef and I wouldnt give it up for anything, well maybe £1million but thats very unlikely!!

I love everything to do with my job the stress, the panic, the atomosphere, the food, the people!

Well thats a sum of it :) I will put some more stuff up later.
